An EVOO obtained from green olives in the first days of the harvest, early harvesting, formerly known as "first pressing", during the month of October. Our harvest is not when the olive has the highest fat yield, but when it has the highest content of polyphenols (and therefore, its peak in aromas and flavour); a fresh extra virgin olive oil. A very smooth, aromatic, light and delicate, sweet and almondy oil.
The whole process is carried out cold, at less than 27ºC, to preserve all its aromas and healthy properties in our family oil mill, and it is kept at a controlled temperature in our cellar until it is sold. 100% natural. 100% olive juice. 100% Extra Virgin Olive Oil.
